Ingredients

    1 tsp splendido cold pressed extra virgin olive oil
    1 tsp Dairy Isle Butter
    1 tbsp Kraft parmesan cheese light
    100 grams Spinach, fresh
    1 cup cherry tomatoes Tomatoes, red, ripe, raw, year round average
    220 gram(s) catelli fettuccine noodles (dry weight)
    454 gram(s) seaquest frozen bay scallops

Directions

Cook fettuccine. Add 1 tsp butter to pasta water.
While that is cooking, cook scallops in 1tsp of olive oil. When cooked, add in 100 grams of spinach. When that wilts, add in chopped tomatoes... serve over fettuccine noodles and garnish with parmesan cheese.
