Number of Servings: 12


    3 lbs. red potatoes
    1 cup milk (2% milk is calculated, I was out of skim)
    1 cup light sour cream, like Breakstone's
    1 cup shredded cheese ( I used colby jack, light or fat free would also work, whatever cheese you like best)
    .5 cup Country Crock light spread (or whatever margarine you prefer)
    .5 bunch green onions, diced (about 6 or 8 onions with part of the green tops)
    salt and pepper to taste


Clean potatoes and halve or quarter, leave skins on, and place in stock pot with enough water to cover, add salt if desired. Bring to a boil and cook until fork tender. Drain and return to stock pot or mixing bowl. Add milk, margarine and sour cream and mash all together until desired consistency (I like mine a bit coarser, hubby likes them smoother). Add cheese and green onion and mix together. Serve while hot. Can also be placed in casserole dish with .5 c cheese in the mixture and the other half on top and baked at 325 for about 20 minutes, until cheese is melted.
