    8 oz Pink Salmon, Chicken of the Sea, skinless/boneless, chunk style in water (drained)
    2 large Egg, fresh, whole, raw
    30 grams Onions, raw (finely chopped)
    80 grams Celery, raw (finely slices)
    1 tsp Lawrys Seasoned Salts
    16 cracker Saltine Crackers (Saltines)
    .33 serving Bertolli EVOO (1 tbsp)
    1 fl oz Lemon Juice (plus zest of one lemon)


You may change onion and celery and different herbs to suite your personal taste.


Mix eggs, onions, celery, lemon juice and zest, seasonings in bowl. Add salmon mixing gently. Crush saltines and add to salmon mixture. Refrigerate about 1hour. Form into 4 patties. Heat olive oil over medium heat in non-stick skillet. Fry patties until golden brown. Serve with lemon wedge.
