Introduction

Rich in vitamin A & low on glycemic index

Not sure why these are a miracle but they helped me lose weight, I used them as breakfast & snacks. They are very dense and filling really tames hunger.

If you don't like the taste of molasses then sub 3/4 cup Agave Nectar for the Molasses & Honey or don't make them because you will not like them. Kids will not like these atleast mine did not.

Freeze unused portions

Ingredients

    1 cup Oat Bran Cereal - Quaker
    2 tablespoons Wheat Germ - Honey Crunch
    3/4 cup flour
    2 teaspoons baking powder
    1 teaspoon pumpkin pie spice
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon salt
    1/2 cup Molasses
    1/4 cup honey
    1 cup canned pumpkin
    1/2 cup skim milk
    2 each egg whites -- lightly beaten
    4 tablespoons applesauce, unsweetened


Directions

Preheat oven to 425. In large bowl combine oat bran, wheat germ, flour, baking powder, pumpkin pie spice, cinnamon, nutmeg and salt

In medium bowl mix molasses, honey, pumpkin puree, milk, egg whites, and applesauce until well blended. Make a well in center of flour
mixture and add pumpkin mixture slowly, blending well.

Spray a 12 cup muffin tin with nonstick vegetable oil spray or use paper cup liners and spoon mixture into the cups until they are 3/4 full. Bake for 20 minutes or until toothpick inserted into center comes out clean.
