Ingredients

    .4 oz Almond Breeze Almond Milk, Unsweetened Vanilla
    1 serving Egg white, large
    1 tsp Cinnamon, ground
    1.25 tsp Baking Soda
    1.25 tsp Baking Powder
    .33 cup Flour - Gold medal all purpose flour
    .33 cup Whole Wheat Flour
    .6 cup, packed Brown Sugar
    .25 cup, packed Raisins
    4 tbsp smart balance omega 3 cooking oil (by KMSTRANG79)
    .75 cup (1 serving) Kellogg's All-Bran Cereal
    .75 cup, grated Carrots, raw
    .25 cup, chopped Walnuts

Directions

Directions
• Blend milk, egg and oil together.
• Next, blend together flour, baking soda, baking powder, brown sugar and cinnamon. Then add to the first blended ingredients.
• Stir in Kellogg’s All Bran, carrots, raisins and chopped walnuts. Spoon into muffin tins (greased or lined), about halfway and then bake at 400 for 15-20 min or until toothpick comes out clean.
Makes 1 dozen

Note: Whole Wheat flour is more dense and won't create a 'muffin top' on your muffins. If you use White Whole Wheat flour, you'll get muffin tops.
