Ingredients

    8 serving Egg whole - medium per egg
    .5 cup Spinach, fresh
    1 medium (4-1/8" long) Scallions, raw
    1 serving Signature Sweets-mini peppers (3)
    .5 cup, pieces or slices Mushrooms, fresh
    .50 cup Kraft Natural Cheese Mexican Style Cheddar Jack Finely Shredded
    4 fl oz Milk, 2%, with added nonfat milk solids, without added vit A

Directions

Spray 12 cup muffin tin with cooking spray. Preheat oven to 375
Chop scallion, mushrooms & peppers. Sauté in small amount of oil until tender. Divide veggies evenly between 12 muffin cups. scramble 8 eggs & add a small amount of milk. Spoon egg mixture over veggies in muffin tin. Bake 10-15 mins at 375 degrees or until center is set.
