Number of Servings: 4


    1 French bread baquette, cut into 8 sm slices.
    2 T. extra light olive oil
    1 C. chopped roma tomatoes
    1 C. Blue Crab
    2 T. chopped fresh basil
    Fresh lemon juice
    Salt and pepper to taste.


With pastry brush spread 1T olive oil evenly over the 8 slices of sliced french bread. Place on tray in 425 degree oven and bake til golden. Remove.

With other T of olive oil lightly saute the crab meat in a small skillet and remove. Season w/salt and pepper to taste.

Evenly divide crab meat and tomatoes over each of 8 slices. Place back in oven just until warm but not brown.

Remove from oven and sprinkle each w/basil and squeeze of lemon juice. Serve immediately.
