Introduction

I was looking for a hearty muffin that would keep me full in the morning. I was looking for a hearty muffin that would keep me full in the morning.
Number of Servings: 16

Ingredients

    *Whole Wheat Flour, 1 cup
    Oats, 1 cup
    Brown Sugar, .5 cup, packed
    Milk, nonfat, 1 cup
    *Egg white, 2 serving
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Salt, .5 tsp
    Cinnamon, ground, 1 tsp
    Banana, fresh, .5 cup, mashed
    Applesauce, unsweetened, .5 cup

Directions

Soak oats in milk for about 1 hour.
Preheat oven to 400 degrees.
Spray muffin pan or line with liners.
Combine oat mixture with egg whites and yogurt.
In a separate bowl mix dry ingredients together.
Add wet ingredients to dry and mix until just combined.
Add banana.
Spoon muffin mix into pan about 3/4 full.
Makes 16 muffins
Bake for 20-25 minutes.
These can be frozen and reheated in the microwave!
