Introduction

Number of Servings: 6

Ingredients

    1 cup quinoa (1 c. dry = 3 c. cooked)
    1/4 c. reduced-fat feta chunks
    1/2 pound cooked medium shrimp
    10 Kalamata or other black olives (not oil-cured), pitted and chopped
    10 green olives, pitted and chopped
    1 oz peppadew peppers, chopped
    1 c. grape or cherry tomatoes, halved
    1 c. red, green, yellow or orange bell pepper, chopped
    1 clove garlic, minced
    1 tsp salt
    3 tbsp flat-leaf parsley, chopped
    2 tbsp mint, chopped (optional) or 2 tbsp oregano, chopped (optional)
    2 tbsp olive oil
    1/4 cup lemon juice


Directions

Rinse and cook quinoa as per package directions. Put in a large bowl and let cool. Once cool, add ingredients from feta through herbs and stir. Mix olive oil and lemon juice and add to salad, tossing to combine. Adjust seasoning to taste. Serve immediately. Serves 6.
