Introduction

Ingredients

    3.5 cups all purpose flour
    3 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 TBSP Cinnamon

    2 TBSP Lemon Juice
    2 cups mashed Bananas

    3/4 cup soft butter or marg
    1.5 cups granulated sugar

    3 eggs

    3/4 cup milk

    OPTIONAL:
    walnuts
    pecans

Directions

In bowl combine the flour, baking powder, baking soda, salt and cinnamon. Set aside.

In a small bowl mash enough bananas to make 2 cups worth and add the lemon juice. Stir. Set aside.

In a very large bowl combine the soft butter and sugar. Mix on low speed till incorporated.
Add eggs ONE AT A TIME to the butter batter, continuing to mix.

Add flour ingredients ALTERNATELY with milk.
***Begin and end with the flour mixture***

Fold in bananas

Spray 2 loaf pans with cooking spray.

Pour half the batter into one pan then the other.

This makes 2 loaves.

Bake at 350 degrees for 45-55 minutes.
Knife inserted into the middle will come out clean when done.
When cool slice each loaf into 15 slices. Serve
