Ingredients

    *Organic All-Purpose White Flour, 1 cup
    *Whole Wheat Flour, 1 cup
    Soy Flour, .25 cup
    Baking Powder, 4 tsp
    Egg, fresh, 2 large
    Vanilla Extract, 1 tsp
    Milk, 2%, 1 cup
    *Horizon Organic Fat Free Yogurt, Plain, 1 cup
    Banana, fresh, 1 cup, mashed
    *Canola Oil, 2 tbsp

Directions

Combine first 4 dry ingredients in a large bowl.

Beat eggs in a separate bowl, then stir in vanilla, banana, yogurt and milk.

Stir wet into dry ingredients, adding additional milk if necessary to get a 'pourable' batter. Do not over mix.

Heat griddle or frying pan to 350 degrees. Add 1-2 tsp oil and ladle spoonfuls of batter. Flip when top starts to bubble and loose it's glossy appearance. Cook until 2nd side is done.

Makes 24 pancakes.
