    3.5 C Soup, chicken broth, canned, less/reduced sodium, divided
    1.5 C Salsa, divided
    2 C Brown Rice, long grain, uncooked
    2 Chicken Breast no skin, cooked and shredded
    1 med Onions, raw,
    2 Cloves Garlic
    Salt to taste
    16 La Tortilla Factory, Whole Wheat Low Carb Tortilla,
    1 C Tillamook Reduced Fat Cheddar Cheese


Place rice, 3 C chicken broth and 1 C salsa in pan and bring to a boil. When boiling reduce heat to a simmer and let cook with lid on for about 45 mins.

Meanwhile in frying pan spray with no stick spray place chopped onion, garlic, and salt and saute for about 5 mins. When done add shredded chicken, 1/2 C chicken broth and 1/2 C salsa and let simmer for 5 mins. mix together with rice. Place filling in center of tortilla and place in a 9X13" pan (this fills 2 pan) spread cheese on top and put foil over. Place in 350 degree oven for 15 mins
