Introduction

Very easy to make and delicious to boot!!!
I like to make mini loaves. They are easier to handle a freeze too.

I like to make mini loaves. They are easier to handle a freeze too.

Number of Servings: 60

Ingredients

    3 eggs
    2 1/2 cups sugar
    1 cup canola oil
    3 tsp vanilla
    15 oz can PURE pumpkin (NOT PIE FILLING)
    3 cups flour - all purpose
    1 tsp baking soda
    1/2 tsp baking powder
    1 tsp salt
    1 Tbsp cinnamon

Directions

Mix all ingredients together.

Spray 2 loaf pans with cooking spray and pour the batter in them.
(If using mini loaf pans this will make 6 of them)

Bake 45-60 Minutes at 350 degrees.

***Can also be made as muffins***
use about 1/8 of a cup per muffin
