Introduction

Yummy zucchini muffins with a twist of lemon! Yummy zucchini muffins with a twist of lemon!
Number of Servings: 12

Ingredients

    1/2 cup wheat flour
    1/2 cup white flour
    1 Tbsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/4 tsp. nutmeg

    1 lg. egg
    3 Tbsp. canola oil
    1/3 cup honey
    1/2 cup nonfat milk
    1/2 cup nonfat yogurt
    1 cup firmly packed shredded zucchini
    1 Tbsp. lemon zest

Directions

Combine dry ingredients and set aside. In a another bowl combine wet ingredients. Add wet ingredients to dry ingredients. Grease muffin tin and fill 2/3 full with batter. Bake for 25-30 min. in an oven preheated to 375'

Makes 12 muffins (1 muffin per serving)
