Ingredients

    1/2 cup Egg Beaters or similar (2 eggs worth)
    3 cups milk
    2 tbsp vanilla extract
    2 cups flour
    1-2 tbsp. finely-ground flax meal
    1 tsp salt
    1/2 tsp baking powder

Directions

Combine all liquid ingredients in large mixing bowl.
Combine all dry ingredients in separate bowl, mix well.
Add dry ingredients to wet, beat with electric hand mixer until just slightly lumpy. Makes approximately 12 4 inch pancakes.
