I was trying to duplicate a casserole from one I remember an old friend of mine making. I think I got pretty close, but I also tweaked it a bit to make it more mine. Ingredients

1 lb ground beef, browned
1 can ranch style black beans
1 packet taco seasoning (any kind)
2 tortillas, cut to fit an 8x8 or 9x9 casserole dish
1 cup cheese, divided
taco sauce to taste
tortilla chips, sour cream, tomatoes (optional)
Directions
Brown beef in a skillet, drain, and place back in skillet. Add taco seasoning and whatever amount of water the seasoning calls for, and can of beans. Stir together over low heat until mixed well. Place half of the mixture in an 8x8 or 9x9 casserole dish, cover with 1/3 the cheese. Place tortilla on top and repeat layers. After the second tortilla piece, cover top tortilla with taco sauce, then put remaining cheese on top. You may crush some tortilla chips and place on top if wanted. Cook at 350 for 30 minutes. Let cool for 5-10 minutes. Cut into 6 pieces and serve with sour cream, tomatoes, and more tortilla chips.
