    2c eggplant cubes

    1/2c plain soymilk

    1 c panko bread crumbs
    2T whole wheat pastry flour
    2 t garlic salt
    2t italian seasoning
    1t raw sugar
    1/4t black pepper
    1/4c freshly shredded parmesan cheese(veggie variety if you prefer)


Peel and cube an eggplant, enough for 2 cups and place soymilk in a bowl and set aside.

Combine the remaining ingredients in a zip top bag. Dump eggplant in bag and mix around. Remove eggplant, leaving remaining bread crumbs in bag. Dip the eggplant in the milk and then back in bag again to coat again. Place on cookie sheet sprayed with cooking spray and place in oven on broil until golden turning once.

Dip in favorite tomato or spaghetti sauce. (Not included in NI)
