Ingredients

Beef chuck, arm pot roast, 2.5 lb
Carrots, raw, 6 carrot (7-1/2") , chopped
Cabbage, red, fresh, 0.5 head, medium (about 5" dia) ,chopped
Onions, raw, 1 medium (2-1/2" dia) chopped
*Potato, raw, 6 small (1-3/4" to 2-1/2" dia.) chopped
flour, about 2 tbsp
any seasonings you like ( I use lemon pepper)
Directions
Season roast with your choice of seasonings. Place in crock pot . Cook on low for about 7 hours without lifting lid to peek (this will add more time to cooking) After roast is almost fully cooked add in chopped veggies. After veggies are fully cooked remove some of the broth from roast (roast creates its own broth during cooking, no need to add any or water) and boil in small saucepan. Stir flour into cold glass of water (about 8oz or so) whisk flour water into broth slowly a little at a time, making sure to whisk vigerously to prevent clumping. Lower heat to med. low and continue to whisk until mix thickens. May need to add more flour to reach as thick as you like. Also may not need to add all of flour mix. All depending on how you like your gravy. Can serve gravy ontop of meat and veggies.
