    1 cup chopped zuchini
    1 large tomato, chopped (1 cup)
    1 oz fat free feta
    1 cup fresh spinach, chopped
    1 cup diced cured ham
    1/2 cup fresh sliced mushrooms
    1/3 cup grated Parmesan Cheese
    1/2 cup Bisquick Heart Smart
    1 cup skim milk
    1/2 cup fat-free egg product
    1/2 tsp salt
    1/8 tsp pepper


Heat oven to 400 degrees F. Lightly spray 8 inch square baking dish with cooking spray. Sprinkle zucchini, tomato, and cheeses across the bottom of the dish.

Spray skillet with olive oil cooking spray and add ham, mushrooms and spinach and cook on medium high heat for 3 minutes. Add mixture to top of vegetables in dish.

Mix Bisquick, milk, egg product, salt and pepper until thoroughly combined and pour over the top of the vegetables, cheese and meat.

Bake uncovered about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
