    1/2 c. Kellogg's corn flake crumbs (or whole wheat breadcrumbs)
    6 scallions, minced
    8 egg whites (Simply egg whites)
    4 tbsps. fat free ricotta cheese
    spinach (optional)
    1 tbsp oregano
    salt (optional)


mince scallions in processor or by hand and saute in olive oil or Pam spray. Meanwhile pat 1/2 c. cornflake or bread crumbs into oven proof dish. Add cooked scallions.
In separate bowl mix egg whites, cheese and spices. Add cooked chopped spinach if using. Pour into crumb mixture.
Bake 25 mins in 425F oven.
Serves 4 as main dish; 6-8 as side dish
