    1 C black or red kindney beans, drained
    1/2 C sweetcorn drained
    50 grams reduced fat cheddar cheese, grated
    1 green onion, chopped
    1/2 C chopped red or green pepper
    1 tsp olive oil
    1 T. Mexican spice blend
    1 T. Red wine vinegar or squeeze lime
    1/4 C tomao salsa
    2 T. light sour cream or yoghurt
    baked tortilla


Mix the first 5 ingredients in bowl. Then toss with oil spices and vinegar. Top wih salsa, yoghurt and tortilla chips.
