Baked Zucchini Casserole with Italian Sausage Baked Zucchini Casserole with Italian Sausage
Number of Servings: 8


    5 Cups Zucchini, chopped
    1/2 pound italian sausage, casings removed
    1 cup onion, chopped
    2 cloves garlic, chopped
    2 tbsp. canola oil
    2 cups cooked rice
    1 16 oz can diced tomatoes
    1 tsp garlic powder
    1/2 tsp basil
    1/2 tsp oregano
    1/2 tsp paprika
    1 cup shredded cheddar or colby cheese, divided


Preheat oven to 350 degrees.

Saute zucchini, onion, and garlic in oil in a large skillet over medium heat for 5 minutes. Place in a separate bowl. Cook sausage in skillet and break apart. Add zucchini mixture to sausage. Set aside.

In a large bowl add next six ingredients plus 1/2 cup of the cheese. Add the sausage and zucchini mixture to the rice mixture. Spread in a greased 9 inch square pan. Sprinkle with remaining cheese. Cover and bake in a 350 degree oven for 30 minutes. Uncover and bake an additional 5-10 minutes. Serves 8.
