    500 g zucchini or 3 cups approx.
    1 small chopped or sliced onion
    1 T. olive oil
    1 c. Bisquick, Heart Smart
    3 extra large eggs
    chopped fresh basil
    1 tsp. garlic powder
    pepper to taste
    2 T. grated cheese
    1/4 c. evaporated fat free milk
    3/4 c. water or 1 cup of skim milk and omit the evaporated milk


Place thinly sliced zucchini into a bowl.
Add sliced onion and olive oil. Mix.
Whisk together the remaining ingredients adding 3/4 c. water and fresh basil or herb of choice.
Place zucchini mixture into a oil sprayed pie plate. Pour egg mixture over. Garnish with sliced tomato or basil.
Bake in 350 degree over 40 to 45 min.
