I only made a half batch. I used all the ingredients but didn't put them in muffin cups. INstead, cooked them in the frying pan, without extra oil/or butter, since the veggies have a bit of liquid in them. Then as the egg began to set, I divided them into round patties and serve on wheat rolls. - 12/2/09

Not bad! I used egg substitute in place of 4 of the eggs, halved the olive oil, and didn't use bacon bits. Also used cheddar instead of mozza. I can't wait to freeze them and be able to just grab breakfast on my way out. - 7/2/09
