    1 Tbs. Canola oil
    2 Tbs. chopped Vidalia onion
    2 Tbs. sweet red pepper
    2 oz. Extra lean ground beef
    1/2 cup
    Egg Beaters Southwestern egg replacement


Chop onion and pepper. Heat oil in pan on med. heat. Add vegetables and meat, and scramble, stirring constantly until the meat begins to brown and the vegetables are tender. Stir in eggs, stir and fold until eggs are done enough. Makes two servings.
