Ingredients

    1 can plain black beans - juice & all!
    3 cloves garlic
    1 onion - diced
    1 red pepper - diced
    1 yellow pepper - diced
    dried thyme
    red pepper flakes
    non stick cooking spray

Directions

In a non stick skillet, saute garlic, onions & peppers until tender. Add black beans with all juices and spices as desired. Cook over medium heat for about 10 minutes or until much of the liquid is cooked off and the beans are in a thick sauce.

Makes 5 1/2c. servings - great accompaniment to vegetables!
