    4 lb Eye of Round beef roast, trimmed & cubed
    1 large onion
    3 tsp chopped garlic
    1 cup old fashion oats, blended into flour
    16 oz dry red wine
    3 - 14oz cans NSA beef broth
    1 16 oz package of baby carrots
    2 TBS NSA Tomato paste
    2.5 lbs potatos sliced into 1 inch cubes
    2 bay leaves
    1 tsp dried oregano
    1 tsp dried rosemary
    1 tsp dried thyme
    Salt and pepper to taste


Season beef with Nosalt and pepper
Brown beef in stock pot, adding small amounts of beef broth to prevent sticking then add onions and garlic and cook until onions are soft.
Sprinkle with oat flour and turn beef to coat evenly.
Add Beef Broth, tomato paste, Red wine and herbs. Bring to a boil. Reduce heat to simmer and add remaining vegetables. Cook 1-3 hours or until potatos are soft. Makes 26 servings.
