Ingredients

    1 Tbsp Dried Parsley
    1 Tbsp Garlic Powder
    1/2 Tbsp Onion Powder
    1/2 tsp Black Pepper
    3/4 C Whole wheeat Reduced Fat Bread Crumbs
    1/2 C FF Egg Beaters
    1 1/2 lbs Eggplant , 1/2 " Thick slices
    1 1/2 C Jarred Spaghetti sauce, low cal
    1 1/2 C FF Mozzarella
    1/2 C Parmessan grated

Directions

Mix all spices except pepper with bread crumbs. Mix pepper with egg beater. Dip eggplant in egg then in crumbs. Press lightly to get crumbs to stick well,roll on edges. Place in sprayed 13x9 pan Bake at 375 15 minutes. Flip over and bake another 15 minutes. Sprinkle parmsan on slices cover with sauce sprinkle with mozzarella. Bake another 15 minutes an cheese is bubbly.
