Crunchy coated chicken strips that aren't fried! Crunchy coated chicken strips that aren't fried!
Number of Servings: 8


    4 Boneless, Skinless Chicken Breasts
    3/4 Cup Cornmeal
    1/4 Cup Flour
    3 Eggs
    1 tsp Seasoned Salt
    1 tsp Chili Powder
    (Try different seasonings!)


Preheat oven to 350* and spray two baking sheets with non-stick cooking spray.
Cut chicken into strips.
Stir cornmeal, flour, and seasonings together in a shallow dish.
Beat the eggs with a fork then stir into the cornmeal mixture.
Coat the strips of chicken with the batter and place on the baking sheet.
The batter is quite thick and may require to be spread onto the chicken. If it is extremely thick, add a little water or milk. If the batter is too thin, it will run off of the chicken early during baking.
Bake chicken for 10 minutes, then turn over and bake for another 10 minutes or until coating is browned and chicken is completely cooked. Thicker strips may require additional time.
