Everyone loves this! Makes a lot of food and it's really good. Everyone loves this! Makes a lot of food and it's really good.
Number of Servings: 6


    4 Large Bell Peppers (your choice of green/yellow or red)
    1 lb of Ground Turkey meat (used to calculate the calories in this recipie- but you can use ground meat, pork or chicken)
    1 medium onion
    2 garlic cloves, minced
    1 beef or chicken bouillon cube
    1 cup Orzo Pasta
    1/2 cup FF Sour Cream
    1 cup diced tomatoes
    1/2 cup salsa
    1 tbsp Soy sauce
    Seasonings- Salt, pepper, chili, red pepper, adobo spices... whatever you please


First prepare the peppers. Boil water and put cut up peppers in for 10 min. Remove and put immediately into ICE water to stop the cooking process. Cut the peppers to you choice. I use to stuff them but now I just cut them into big bite sized pieces.

Cook the orzo according to package direction.

Preheat oven to 350 degrees.

Heat skillet,saute ground meat, onion, garlic, 1/2 the beef bouillion cube, and any seasoning you want- but i recommend salt, pepper, adobo, chili powder, red pepper and cumin.

Saute until onions are translucent. Add orzo, sour cream, tomatoes, salsa and soy sauce. Mix and saute for a few minutes.

Stuff the peppers or mix in the cut up peppers. Put in a casserole dish (I line with Foil). Mix the other 1/2 of the bouilion cube with 1/2 cup water and pour over peppers/mixture.

Cover and bake for 20-25 min. Take out and stir, or pour some of the juices over the peppers. If you want - add Mozzerella cheese on top (not included in this recipe) and put back in the oven for 10 min to melt cheese.

  • Great recipe. I made it for my son, my parents and my nieces and nephews. We couldn't get the older kids to eat the peppers but they loved the filling and went back for seconds. I will definitely make this again. - 8/25/08
