Number of Servings: 4


    Tofu, soft, 2 block
    Egg, fresh, 2 large
    *Flour, white, .5 cup
    Ginger Root, .5 tsp
    Chicken Broth, 1.33 cup
    Sherry, dry, .1 Tbsp
    *Soy Sauce, 2 tsp
    Sesame Oil, 1 1tsp
    Cornstarch, .5 tsp
    Green Onions (minced), 1 Tbsp
    Oil, 5 Tbsp

    Additional minced green onions for garnish


Serves 4

1. Cut the blocks of tofu into 12 pieces. Put it on a plate and lightly sprinkle with salt. Allow to stand for 10 minutes while you prepare the remainder of the ingredients.

2. Mince ginger root finely and mince green onion

3. In a 2 cup measuring-cup or bowl, mix the following: 1.33 c chicken stock, 1 Tbsp sherry, 2 tsp soy sauce, 1 tsp sesame oil and 1/2 tsp salt

4 In a bowl, beat the two eggs.

5. Add 4 Tbs Oil to a frying pan and heat over moderate heat

6. Put the flour on another plate and dip the tofu slices in it to cover both sides (no a thick coating) then dip the slices in the egg to coat. Add to the frying pan and fry on both sides until golden brown. Remove and drain.

7. In your wok, add 1 Tbsp oil. Stir fry the chopped green onion and ginger quickly.

8 Add the bowl of sauce and the tofu. Simmer for 3 minutes.

9. Mix 1/2 tsp of corn starch with a Tbsp of water and add to the wok to thicken the sauce.

Serve with additional minced green onions on top.
