Ingredients

3 eggs
1 1/2 tbsp sour cream
1 tsp margarine
1 cup chopped onion
1 cup chopped zucchini
1 cup chopped fresh spinach
1/4 cup shredded old white cheddar
Directions
Whisk egg with sour cream and salt to preference. Set aside.
Heat margarine in small frying pan. Add onion, zucchini and salt to taste. Cook until done enough for your liking. Add spinach. Mix around for a minute or two. Pour over whisked egg. Mix around for another minute or two. Turn heat to lowest setting, and smooth out the egg and veg mix. Sprinkle with cheese. Cover and let finish cooking through for about 10 to 15 minutes, until cheese is melted and bubbling. Serves 2.
