    1 can veggie broth
    1.25 c aborio rice
    one green zucchini
    one yellow zucchini
    1 TB light smart balance buttery spread with flax oil
    2 wedges light laughing low (any flavor)-
    1 tomato


Cut up zucchini. Place with broth, rice, and butter in microwavable bowl and heat on high for 12-15 minutes. Stir in Laughing Cow and chopped tomato. Makes approximately 4 1.5 cup servings.
