Introduction

My whole family likes this dish. You can reduce the calories by leaving off the topping and cheese, and it is still very tasty. My whole family likes this dish. You can reduce the calories by leaving off the topping and cheese, and it is still very tasty.
Number of Servings: 8

Ingredients

    1 chicken breast, grilled and diced
    1 10 oz. can cream of chicken soup
    1 c. chicken broth
    1 c. fat-free plain yogurt
    1 1/2 c. whole-grain brown rice

    Topping
    8-10 club crackers, crushed
    2 T. butter, melted

    1 c. shredded cheddar cheese

Directions

Mix together first five ingredients. Pour into square baking dish. Toss cracker crumbs with melted butter. Spread evenly over top of chicken mixture.
Bake at 350 degrees for 25 minutes. Remove and top with cheese. Return to oven for an additional 20 minutes.
