    1 pound skinless, boneless chicken breasts
    2 cups lightly steamed broccoli
    1 small can mushrooms
    Scallions, raw, .25 cup, chopped
    Peanut Butter, chunk style, 2 tbsp
    Ginger, ground, 1 tbsp
    Garlic, 2 cloves, minced
    Brown Sugar, 2 tsp unpacked
    Chicken Broth, 1.5 cup
    Brown Rice, 6 cup cooked
    Corn Starch, 3 tbsp
    Pepper, red or cayenne, .5 tsp
    Limes, 2 fruit, juiced
    Canola Oil, 2 tbsp


Lightly fry chicken in oil. Drain oil and add steamed broccoli. Combine all other ingredients in mixing bowl. Add to hot pan. Bring to a boil, then simmer for 5 minutes.
Serve on top of cooked rice.
