Introduction
I got this recipe out of a magazine, but I honestly don't remember which one. It's a great way to get spinach into everyone's diet! I got this recipe out of a magazine, but I honestly don't remember which one. It's a great way to get spinach into everyone's diet!Number of Servings: 8
Ingredients

2 1/2 cups Whole Grain Rotini
1 lb cooked shrimp (I use 51 - 60)
4 oz Feta Cheese, crumbled
3 cups fresh spinach
1 red pepper, diced
2 tbsp basil
1/2 tsp salt
1 2.25 oz can sliced black olives, drained and rinsed
2 tbsp olive oil
Directions
Heat oven to 350. spray 13 x 9 dish with cooking spray. Cook pasta as directed on package, adding shrimp for last minute or two. Drain and return to pan. Stir in 1/2 cup of the cheese and the remaining ingredients except olive oil. Pour into baking dish and spread evenly. Bake 10 - 15 minutes. Sprinkle with oil and toss. top w/ remaining cheese and serve. Serving size = 1 cup
