Ingredients

    32 oz cooked Pasta
    1 cup olive oil
    2 cups sliced red pepper
    1 medium onion
    8-10 Fresh Basil leaves
    1-2cups mushrooms
    3 cloves garlic
    salt/pepper to taste

Directions

cook pasta as directed. Saute red pepper, onion, garlic, mushrooms, and basil in the 1/4 cup of olive oil (saves the rest). Only cook vegetables until slightly cooked, you want them to still have a bit of texture not soggy. Drain pasta and add to a big pasta bowl. Add entire contents of vegetable pan into the pasta. Mix, add more of the olive oil if too dry. Salt and Pepper to taste.
You may add parmesan cheese but don't forget to account for it.
