Thick Creamy Fresh Pumpkin Soup Thick Creamy Fresh Pumpkin Soup

    In Dutch Oven (or heavy soup pot) saute till transluscent:
    Onions, raw, 1 cup, chopped fine in
    Olive Oil, 3 tbsp (or bacon grease for flavor)
    Pumpkin, cooked, 3 cup, mashed
    (Raw pumpkin can be seeded and cut into 2 inch squares, steam with onions, stirring often. remove when tender, cool and cut off skins, add back to pot and mash or blend)
    Potato, raw, 2 large (3" to 4-1/4" dia.) cut into pieces, mash or blend with pumpkin mixture.
    Stir In:
    Chicken Broth, 1 cup (8 fl oz)
    Milk, canned, evaporated, nonfat, 1 cup
    Nutmeg, ground, 1.5 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp


Saute chopped onions in oil till transluscent over medium heat, (sprinkle of salt prevents browning)
Add Pumpkin pieces (or canned pumpkin)and potatoes
Steam till tender, stirring often
Remove and skin pumpkin pieces, add back to pot (omit step for canned pumpkin)
Mash or blend well
Add remaining ingredients
Simmer over medium heat, stirring often, 15-20 minutes
Garnish with Fresh Ground Nutmeg
or Bacon Bits
