Introduction

I felt like having potato salad and decided to experiment... came out pretty good if i do say so myself.. I added tofu for extra protein and that hard-boiled egg texture found in most potato salads. Ingredients

    2 Medium Potatoes
    2 Celery Stocks Chopped
    1/2 C. Scallions Chopped
    1/2 Block Firm Tofu Cubed
    3 tbs. Dill Pickle Relish
    1 tbs. Tofutti Better than Cream Cheese
    1 tbs. Follow Your Heart Vegenaise
    1 tsp. Mustard
    4 strips Lightlife Smart Bacon


Directions

Add peeled and cubed potatoes to pot with enough water to cover, bring to a boil and cook about 10 minutes, or until tender but not mushy.

In a large bowl combine vegenaise and vegan cream cheese, when mixed add hot potatoes, stir gently until coated add remaining ingredients and salt and fresh ground black pepper to taste...

Let cool in refrigerator. and enjoy..
