This recipe is great as is but I really love it as a sandwich spread. I add about 2 tsp. mayo to a 1/2 cup serving as a binder! This recipe is great as is but I really love it as a sandwich spread. I add about 2 tsp. mayo to a 1/2 cup serving as a binder!
Number of Servings: 10


    3 Cloves Garlic, pressed or chopped
    1/2 Cup Onion, minced
    3 Medium Carrots, Grated
    1 Brick Tofu (I like extra firm for this) crumbled

    Olive oil for pan
    Tamari (Soy Sauce) for Flavor


Heat olive oil in pan over medium heat. Cook garlic and onion until tender. Add carrots. Cook until tender, NOT MUSH!!! Add Tofu. Cook until warm. Add Tamari or soy sauce to taste. Cook an additional couple of minutes until flavors blend (tofu will pick up flavors!). This is ready to eat if you want it warm. I like to cool it first and add it to salads or eat as a sandwich spread when tossed with mayo or plain greek yogurt.

Makes roughly 10 1/2 cup servings.

  • Yummy Lunch stuffing with wholemeal pittabread! leftovers tasted a bit too sweet for me the next day so I added green chillies, corriander and a little mash and gram flour and had delicious burgers served with a green salad! Lovely receipe and easy to make with things already in the cupboard!! - 10/17/08
