    1 cup Orange Juice
    1 cup Raisins
    1 cup Carrots, grated
    1 cup Zucchini, grated
    1 cup sugar
    11/2 cup Canola Oil
    4 Eggs
    1 Banana, Mashed
    4 cups Whole Wheat Flour
    2 cups Flour
    4 tsp Baking Powder
    2 tsp Baking Soda
    1 tsp Salt
    2 tsp Cinnamon, ground
    2 tsp Nutmeg, ground


Line muffin tins (24), mini loaf pans (4) with paper liners.
Heat Orange juice and raisins together just to boiling, remove from heat. Set aside. In mixing bowl beat together sugar, eggs, and mashed banana until well blended. Add the next 6 ingredients, then add orange jucie and raisin mixture.
Fill each muffin cup 3/4 full. Place in preheated 350 degree oven. put on the middle rack of the oven for even cooking. Cook for 30 - 40 minutes depending if making muffins or loaves. I cooked them for 30 min and 25 for mini muffins. But check your muffins at 20 minutes into cooking for ovens vary.
