    3/4 lb ground beef
    1.5 c zucchini, sliced and quartere
    4 oz green chilis
    1/4 c diced onions
    1/2 c light sour cream
    1/2 c monterey jack
    1/2 c rice


brown ground beef, drain. Cook rice, set aside. add 1 T butter to skillet then saute zucchini and onions til tender. Add 1 1/2 T chili powder, 1/2 t garlic powder and salt. Stir in sour cream, chiis, and rice and cheese. Mix well and place in greased 2 qt casserole dish. Bake at 350 for 20 minutes, uncovered.
You can add more zucchini, if you like
