    2 Cups Flour
    1 Cup Sugar
    1 Tablespoon Baking Powder
    1 Teaspoon Salt
    1 Large Egg
    2 Large Egg Whites
    1/4 Cup Unsweetened Applesauce
    4 Tablespoons Melted Butter/Margarine
    3/4 Cup Nonfat Milk
    1 Cup Blueberries


Preheat oven to 350 degrees.

In a large bowl sift flour,sugar, baking powder, and salt. In a small bowl combine eggs, applesauce, melted butter/margarine, and milk. Fold your wet ingredients into your dry ingredients. Gently Mix in your blueberries. Either spray two mini muffin pans with non-stick cooking spray or line them with mini paper muffin wrappers. Fill each one about half way with batter. Bake 15-20 mins. Makes about 45 muffins.
