Introduction

I make this in late summer when the garlic is fresh and local.
I use it cooking and as a condiment.

Number of Servings: 20

Ingredients

    enough garlic to make 1c crushed or chopped fine
    3 tsp kosher salt (if using regular use half the amount)
    3 Tbsp Extra Virgin Olive Oil (or grapeseed oil)

Directions

Watch a movie while you peel and crush all that garlic.
Put the Olive oil in a small heavy bottomed non reactive pan and warm on low.
Add the garlic and the salt and stir.
leave on low long enough for the ingredients to become hot but not sizzling.

The idea is to bring it up slowly when hot and the sharp bite is gone from the garlic, spoon it into a sterilized jar and put a lid on it.

Because of the salt this does not need to be refrigerated.
