Number of Servings: 3


    1 c corn
    1 c beans
    1 small onion
    1 medium Tomato
    2 dash salt
    1 dash pepper
    3c water or more if needed
    1 tsp dried parsley
    1 Tsp sunflower oil


This recipe tastes best if prepared freshly on a charcoal cooker, but then the corn and beans have to boil for a long time.

You start by boiling the corn with salt for about 2 hrs on simmering point. When it starts getting a bit soft you add the beans and boil both together until soft. Keep adding water as needed.
When soft put aside.

Cut onion and tomato on cubes. Heat teh oil fry the onions, add the tomatoes, then add the corn & beasn and all other spices. Now fry for about 10 minutes at a low heat.

This is a main meal and most of the poor people eat it alone. Those who are a bit better off, might fry some cubed beef with it or have it with a salad.
