    Egg, fresh, 3 large
    Vanilla Extract, 2 tsp
    Zucchini, 2 cup, sliced
    Granulated Sugar, 2 cup
    *Flour, white, 3 cup
    *Canola Oil, 1 cup
    Cinnamon, ground, 3 tsp
    Baking Soda, 1 tsp
    Baking Powder, .25 tsp
    Raisins, 1 small box (1.5 oz)
    Salt, 1 tsp


Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans.
In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and raisins; stir into the egg mixture. Divide batter into prepared pans.
Bake for 60 to 70 minutes, or until done.
