this is so easy to make and so yummy, my kids love this version. this is so easy to make and so yummy, my kids love this version.

    1.5 kg pumpkin, peeled and deseeded
    1 Litre Campbells real chicken stock
    2 cloves garlic - of course you can add more if you like
    1 can Carnation Light and Creamy Evaporated milk (375ml)
    1 large baked Potato with skin on,


Roughly chop pumpkin and peel garlic. Add to a pan (must have good fitting lid) with about 1/4 cup of the stock. Steam pumpkin until it is tender...keep an eye on the liquid level...this helps to give the pumpkin a nice strong flavour. once the pumpkin is soft add the rest of the stock and chopped baked potato (i do mine in the microwave) bring to the boil. mash or puree the soup and return to the pan adding the evaporated not boil at this stage.
sprinkle with parsley and lots of cracked black pepper.

makes 6 - 8 servings

    They are not listed in the ingredients list and does the NI info reflect potatoes???

    Sorry about that, i had included it in the nutritional panel but forgot to put it in the ingredients list. Yes NI reflects the potato
