    12 oz. Pasta

    2 Tbsp. Olive Oil
    2 Tbsp. Butter or Margarine
    3-6 cloves garlic, crushed or minced
    2 cups cherry tomatoes, halved
    1 cup fresh spinach, chiffonade
    1 cup fresh basil, chiffonade
    4 oz. fresh mozzarella, small dice
    2 Tbsp. pine nuts, toasted


Prepare Pasta according to package directions.

Heat olive oil and butter over medium high heat. When butter has melted, add garlic. Cook for about 1 minute. Add tomatoes. Cook until softened. Add cooked and drained pasta, spinach, and basil. Cook until greens have wilted, but not lost their color. Turn of heat and stir in mozzarella and pine nuts.
