A great, light, low calorie meal. Great for winter & summer. A great, light, low calorie meal. Great for winter & summer.
Number of Servings: 4


    1-2 boxes of Vegetable Broth (depending on how soupy you want it)
    3 small Red Potatoes
    2 Celery Stalks
    2 Carrots
    3 palm fulls of Orzo Pasta
    4 Medium Mushrooms
    1/2 Medium Red Onion
    1 Bay Leaf
    Salt & Pepper to Taste


In a soup pot, add the vegetable broth and orzo... let the orzo cook a little before adding your veggies. While that's cooking up, chop up your veggies into cubes (I like it chunkier and heartier rather than finely diced). Throw in the bay leaf (you only need one... they're so potent)... I added the potatoes, carrots and onions first because they take a little longer to cook than everything else, but it's really only a few minutes. Add the rest of the veggies and spices until everything is cooked. And voila! It's that easy! You can use any veggies (broccoli, cauliflower, etc... whatever you have that needs to be used)...
