    1/2 cup rice (white or brown)
    2 cups carrots, grated (about 4)
    1 tsp cumin
    1 cup low sodium chicken broth
    2 tb pine nuts, toasted


Combine rice, carrots, cumin, and chicken broth in a small saucepan. Bring to a boil. Reduce heat, cover, and cook until liquid is absorbed, about 17 min. Add pine nuts. Makes approximately 3 1-cup servings.
